Removing transcription can help, but staffing and revenue do not improve automatically. Measure the entire service cycle and the extra help customers still need.
Calculate net time, not theoretical time
Subtract scanning assistance and exception handling from work eliminated. In an illustrative scenario, 173.3 monthly hours × 60% removable work − 13 hours of new support leaves about 91 hours. At an assumed TWD 220 per hour, that is TWD 20,020 of capacity value. Unless paid shifts actually fall, it is not cash payroll savings.
Locate the table-turnover bottleneck
Saving 10–15 minutes is a test scenario, not a general research finding. Reducing a 90-minute table cycle to 80 minutes changes theoretical capacity in a 180-minute peak from 2 turns to 2.25. For 20 tables at TWD 800, that represents TWD 4,000 of potential peak capacity, only if demand, kitchen output, seating, and clearing can support it.
Remove the sources of customer frustration
Tiny PDF menus, compulsory registration, hidden surcharges, unclear table numbers, and missing submission feedback create new problems. Keep staff assistance available for people without a working phone or who need help. Time saved from transcription can support service and special requests.
Make the order easy to verify
Use a browser menu with readable categories, current availability, clear option limits, and a total that updates. Before sending, show table, items, quantities, and total. Afterwards show an order number and status. If online payment is included, test confirmation, failure, and refund separately.
Pilot a section or one shift
Compare assistance per table, errors, ordering time, and revenue per labor hour against similar service periods. Record seating, ordering, serving, departure, and clearing times. Let staff help revise item names and ticket formats before expanding.
Before you start
- Measure net work eliminated.
- Separate capacity value from payroll reduction.
- Check kitchen, seating, and clearing constraints.
- Pilot with staff and compare equivalent periods.
Your next step
Bring observations from a busy shift. We can identify where QR ordering might release useful time and what needs to change around it.
